Gobble 'til you Wobble!

Wow! I can't believe we get to go home today and visit for the week! We are quite excited because it has been too long since we've seen dear family and friends from TN! We're heading to my parents' house for the majority of the break and then passing through K-town for a day. Taste of Thai, here we come! I have been craving their Pad Thai for quite some time now... Happy Thanksgiving!!

On another note, we had the privilege of taking Jerry Bridges out to lunch and to the airport on Sunday. Mr. Bridges taught last week on Grace and Sanctification then preached at Covenant Life Church. It was such a joy for us to be able to thank Mr. Bridges personally on how his life and books have made a great impact on us. He has been serving the Lord for 60 years now. What a dear saint!

Grateful for CCK!

So last night our church from home had a family meeting and we got to chat with them via webcam! It was so fun and weird at the same time (you can see Walt's excitement and anticipation as we waited to be interviewed)! Only weird because I wasn't used to being on a webcam in front of hundreds of people. We loved talking to our church family and giving an update of this year at the PC. CCK really means a lot to the both of us...God has used this church to change our lives in great ways and we will be forever grateful! To all CCKers: we love you, we miss you, we respect you, and we can't wait to get back and serve along side with you!!!! It brought us great joy to see you last night! Thank you for all of your prayers as we've been up in MD!

Fall is for baking...

Fall has been here and I have been in the mood to bake. I have tried several banana bread recipes in the last couple of years and I think I have found my favorite one. I made this last week and thought I'd share it with you because it's so yummy! Two reasons why I like this recipe? It calls for whole wheat flour (which makes it healthier) and brown sugar. Let me know if you end up making it and what you think!

Banana Bread

1/2 cup butter
1 cup brown sugar
2 eggs
1 cup mashed bananas (I usually do 1 1/2 - 2 cups of mashed bananas)
2 cups whole wheat pastry flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup milk
1 teaspoon vanilla (optional)
1 cup coarsely chopped nuts (optional)

I also add chocolate chips if I have them on hand.

Cream butter and sugar; add eggs and mix well. Stir in mashed bananas. Sift dry ingredients together and add to creamed mixture alternately with milk. Beat only until smooth. Add vanilla and nuts. Pour into well buttered loaf pan. Bake at 350 degrees for 50-60 minutes or until wood pick inserted in center comes out clean.
