On another note, we had the privilege of taking Jerry Bridges out to lunch and to the airport on Sunday. Mr. Bridges taught last week on Grace and Sanctification then preached at Covenant Life Church. It was such a joy for us to be able to thank Mr. Bridges personally on how his life and books have made a great impact on us. He has been serving the Lord for 60 years now. What a dear saint!

Gobble 'til you Wobble!
Wow! I can't believe we get to go home today and visit for the week! We are quite excited because it has been too long since we've seen dear family and friends from TN! We're heading to my parents' house for the majority of the break and then passing through K-town for a day. Taste of Thai, here we come! I have been craving their Pad Thai for quite some time now... Happy Thanksgiving!!

Fall is for baking...
Fall has been here and I have been in the mood to bake. I have tried several banana bread recipes in the last couple of years and I think I have found my favorite one. I made this last week and thought I'd share it with you because it's so yummy! Two reasons why I like this recipe? It calls for whole wheat flour (which makes it healthier) and brown sugar. Let me know if you end up making it and what you think!
1/2 cup butter
1 cup brown sugar
2 eggs
1 cup mashed bananas (I usually do 1 1/2 - 2 cups of mashed bananas)
2 cups whole wheat pastry flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup milk
1 teaspoon vanilla (optional)
1 cup coarsely chopped nuts (optional)
I also add chocolate chips if I have them on hand.
Cream butter and sugar; add eggs and mix well. Stir in mashed bananas. Sift dry ingredients together and add to creamed mixture alternately with milk. Beat only until smooth. Add vanilla and nuts. Pour into well buttered loaf pan. Bake at 350 degrees for 50-60 minutes or until wood pick inserted in center comes out clean.
Enjoy!

Cheeburger Cheeburger Challenge!
Last week, Bruce Chick gave the PC guys a challenge in order to drop a quiz in class. Each person had to eat Cheeburger Cheeburger's 'famous pounder' which is actually a huge 20 ounces (1.25 lbs)! (Can you imagine eating that much beef in one sitting?! I love red meat and all, but...ugh. I don't think I would be able to finish one of those!) Walt finished 3rd. Go babe! Josh Blount, the guy holding the burger, finished in 1st place. The entire class made it on the wall-of-fame! The picture is horrible quality but that's what the lady at Cheeburger gave me.
